Dairy-free chocolate mousse
The French dessert mousse au chocolat is traditionally made with cream or butter. Now we have an alternative recipe including avocado which is healthier, but also a culinary delight.
Ingredients (4 servings):
150g of dairy-free dark chocolate
1x bar of chocolate of your choice
160g of tin of coconut cream
2x big ripe avocados
2x tablespoons of cocoa powder
2x teaspoons of vanilla bean paste
3x tablespoons of maple syrup
fresh fruit of your choice
Preparation: Place a heatproof bowl over a pan of simmering water making sure the base doesn’t touch it. Break the chocolate into the bowl and allow it to melt, then set it aside to cool slightly. Meanwhile, halve and remove the stone from the avocados and scoop the pulp into a food processor discarding the skins. Add the remaining ingredients and mix them for a few seconds. Scrape down the sides with a spatula, then mix again to combine. Pour in the cooled chocolate and mix a final time until creamy and smooth. Split the paste into 6 bowls and put it in the fridge to cool for at least 30 minutes. Serve with an extra scoring of chocolate and fresh fruit.
