Summer rolls
While spring rolls are quite a popular dish at any Asian restaurant, people often forget about their non-fried counterpart, known as summer rolls. However they are easier to prepare and stronger in taste. So check them out by yourself!
Ingredients (15 servings):
15 rice paper wrappers
700g of chicken breast
1x cucumber
2x carrots
1x iceberg salad
1x bunch of mint
1x bunch of coriander
1x bunch of parsley
Chinese spices
sweet chilli sauce
culinary oil
Preparation:
Wash all vegetables, then cut carrots, cucumber, iceberg salad and chicken breasts into pieces. Chop up mint, coriander and parsley. Season the chicken with Chinese spices and cook it in heated oil until golden brown. Mix sweet chilli sauce, carrot and cucumber slices with the chicken. Once they are all the way cooked, take them out of pan.
Fill a shallow pan with hot water. Dip in the rice paper wrappers one at a time until they are soft and you are able to roll them. Spread the rice paper onto a clean and flat surface. Garnish your roll with salad, chicken, cucumber and add a slight touch of mint, coriander and parsley.
Fold the bottom end of the rice paper over the top of the portion, then roll it up. Repeat this process until all ingredients are used. Enjoy!
